The kitchen leaned into scratch preparations: housemade chorizo, tortillas sourced from a local tortillería, and menus that shifted with the season, drawing on culinary traditions from Veracruz, Tamaulipas, and Monterrey. Sharable plates like the molcajete de mariscos and the parrillada de carne were the draw, and the intimate counter let diners watch and talk to the cooks. Note: Ixím was reported permanently closed as of 2026.
